    Definition
    A squash soup with beef, vegetables and pasta, eaten on 1 January to celebrate Haiti's independence in 1804. Under slavery it was reserved for the colonists, so eating it marks freedom. UNESCO added it to its intangible cultural heritage list in 2021.
